Chai Latte

 
Upgrade your at-home barista skills with a comforting twist on a classic chai latte! Ingredients

  • 1 cinnamon stick
  • 4 cardamom pods
  • 4 peppercorns
  • 2 cloves
  • 1 star anise
  • 2 black teabags
  • 1/2 tsp vanilla extract
  • pinch of freshly grated nutmeg
  • plus extra to serve
  • 250ml whole milk
  • 1 tsp light brown soft sugar
  • 60ml freshly brewed espresso

Instructions

  1. Toast the spices in a dry frying pan over low heat until fragrant, then tip into a teapot with the teabags, vanilla and nutmeg. Cover with 250ml boiled water and leave to steep for 3 mins.
  2. Tip the milk and brown sugar into a small pan and warm over low heat, stirring until the sugar has dissolved and the milk is simmering. Beat with a whisk or milk frother until foamy.
  3. Divide the espresso between two mugs. Strain the tea into a jug and pour this over the espresso. Slowly add the hot milk mixture, holding some of the froth back with a spoon, then top with the frothy milk and a sprinkle of nutmeg.
